  • 10 oz chopped frozen spinach thawed and squeezed dry

  • 1 tbsp fresh chives, minced
  • 1 tsp dried dill weed
  • 2 tsp fresh lemon juice
  • 0.5 tsp minced garlic
  • 0.5 tsp kosher salt to taste
  • 0.25 tsp black pepper
  • 0.5 cup water chestnuts, finely chopped drained; optional for crunch
  • 0.25 tsp hot sauce optional

Instructions

Preparation Steps

  • Squeeze the thawed spinach very dry until no liquid drips.
  • Beat the softened cream cheese in a bowl until smooth and fluffy.
  • Stir in sour cream and mayonnaise until the mixture is creamy.
  • Mix in lemon juice, garlic, dill, parsley, chives, salt, pepper, and hot sauce.
  • Fold in the spinach, Parmesan, and water chestnuts until evenly distributed.
  • Taste and adjust seasoning. Chill 30 minutes if time allows, then serve.

Notes

Variation: Swap half the sour cream with plain Greek yogurt for a tangier dip, or add 1/4 cup crumbled feta for extra savoriness. Serve in a hollowed bread bowl or with crisp veggies, chips, or warm pita.
