  • 1 cup pumpkin puree unsweetened, canned or homemade
  • 0.5 cup coconut oil melted
  • 0.75 cup dark brown sugar packed
  • 1 teaspoon vanilla extract
  • 2 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 0.5 teaspoon nutmeg
  • 0.5 teaspoon ginger ground
  • 0.25 teaspoon cloves ground
  • 0.5 cup raisins optional
  • 0.5 cup chopped nuts optional, such as walnuts or pecans

Instructions

Preparation Steps

  • Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
  • In a large bowl, mix pumpkin puree, melted coconut oil, brown sugar, and vanilla until smooth.
  • In another bowl, whisk together whole wheat flour, baking soda, cinnamon, nutmeg, ginger, and cloves.
  • Gradually add dry ingredients to wet ingredients, stirring just until combined. Fold in raisins and nuts if using.
  • Drop tablespoons of dough onto prepared baking sheets, spacing 2 inches apart. Flatten slightly with the back of a spoon.
  • Bake for 12-15 minutes, or until edges are golden brown. Cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.
