Instructions
Preparation Steps
Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper.
In a large bowl, mix pumpkin puree, melted coconut oil, brown sugar, and vanilla until smooth.
In another bowl, whisk together whole wheat flour, baking soda, cinnamon, nutmeg, ginger, and cloves.
Gradually add dry ingredients to wet ingredients, stirring just until combined. Fold in raisins and nuts if using.
Drop tablespoons of dough onto prepared baking sheets, spacing 2 inches apart. Flatten slightly with the back of a spoon.
Bake for 12-15 minutes, or until edges are golden brown. Cool on baking sheets for 5 minutes, then transfer to wire racks to cool completely.
