Ingredients

Main Ingredients

  • 8 oz whole wheat elbow macaroni
  • 1 cup shredded cheddar cheese sharp
  • 1 cup shredded mozzarella cheese
  • 2 cups skim milk
  • 2 tbsp all-purpose flour
  • 2 tbsp unsalted butter
  • 0.5 tsp salt or to taste
  • 0.25 tsp black pepper freshly ground
  • 1 tsp dijon mustard

Instructions

Preparation Steps

  • Cook the elbow macaroni according to package instructions. Drain and set aside.
  • In a large saucepan over medium heat, melt the butter. Stir in the flour and cook, stirring constantly, for about 1 minute, until lightly golden.
  • Gradually whisk in the milk, ensuring no lumps form. Continue to cook and stir, until the mixture thickens and begins to bubble.
  • Remove from heat and add the shredded cheddar and mozzarella cheeses. Stir until completely melted and smooth.
  • Add the salt, pepper, and dijon mustard. Mix well.
  • Combine the cooked macaroni with the cheese sauce, stirring well to coat the pasta evenly.
  • Serve immediately, garnish with additional black pepper if desired.

Notes

For a crunchy topping, consider sprinkling toasted breadcrumbs over the macaroni and cheese before serving.
