Instructions
Preparation Steps
Preheat the oven to 400°F (205°C). Pierce sweet potatoes with a fork and bake for 35-40 minutes until tender.
Heat olive oil in a skillet over medium heat. Add diced onions and garlic, sauté until translucent.

Add ground turkey to the skillet, season with paprika, salt, and pepper. Cook until no longer pink.

Stir in chopped spinach and cook until wilted, about 2 minutes.

Slice baked sweet potatoes in half and scoop out some flesh to create a cavity for stuffing.

Mix the turkey and spinach mixture with the reserved sweet potato flesh.
Fill each sweet potato half with the mixture and sprinkle mozzarella cheese on top.
Place stuffed sweet potatoes on a baking sheet and bake for an additional 10 minutes until cheese is melted and bubbly.

Notes
You can substitute mozzarella with cheddar cheese or add a pinch of chili flakes for extra heat.
