  • 1.5 lb ground turkey
  • 4 medium sweet potatoes baked and halved
  • 1 cup spinach fresh, chopped
  • 0.5 cup onion diced
  • 2 cloves garlic minced
  • 0.25 cup mozzarella cheese shredded
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Instructions

Preparation Steps

  • Preheat the oven to 400°F (205°C). Pierce sweet potatoes with a fork and bake for 35-40 minutes until tender.
  • Heat olive oil in a skillet over medium heat. Add diced onions and garlic, sauté until translucent.

  • Add ground turkey to the skillet, season with paprika, salt, and pepper. Cook until no longer pink.

  • Stir in chopped spinach and cook until wilted, about 2 minutes.

  • Slice baked sweet potatoes in half and scoop out some flesh to create a cavity for stuffing.

  • Fill each sweet potato half with the mixture and sprinkle mozzarella cheese on top.
  • Place stuffed sweet potatoes on a baking sheet and bake for an additional 10 minutes until cheese is melted and bubbly.

Notes

You can substitute mozzarella with cheddar cheese or add a pinch of chili flakes for extra heat.
