  • 1 lb ground turkey lean or extra lean
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 8 oz mushrooms sliced
  • 1 cup beef broth
  • 1 cup sour cream full fat or light
  • 2 tbsp all-purpose flour
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 0.5 tsp salt to taste
  • 0.5 tsp black pepper to taste
  • 12 oz egg noodles or rice, cooked
  • 2 tbsp fresh parsley chopped, for garnish

Instructions

Preparation Steps

  • In a large skillet, heat olive oil over medium heat. Add diced onion and minced garlic, sautéing until the onion is translucent.
  • Add sliced mushrooms to the skillet and cook until they are lightly browned.
  • Add ground turkey to the skillet, cooking until it is browned and cooked through. Drain any excess fat.
  • Sprinkle paprika, salt, and black pepper over the turkey mixture. Stir in flour until well combined.
  • Slowly pour in the beef broth, stirring constantly to avoid lumps. Simmer for 5 minutes to thicken.
  • Stir in the sour cream and mix until heated through. Do not let it boil.
  • Serve the stroganoff over cooked egg noodles or rice, garnished with chopped parsley.

Notes

You can substitute ground turkey with ground beef if preferred, and adjust seasoning as needed.
