  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 0.5 cup red onion thinly sliced
  • 0.5 cup feta cheese crumbled
  • 0.25 cup olives pitted and sliced
  • 2 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon oregano dried
  • 1 clove garlic minced
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper freshly ground

Instructions

Preparation Steps

  • Preheat a grill or grill pan over medium-high heat.
  • Season the chicken breast with salt, black pepper, and oregano.
  • Grill the chicken for 5-7 minutes on each side or until fully cooked.
  • Allow the chicken to rest before slicing it into strips.
  • In a large bowl, combine romaine lettuce, cherry tomatoes, cucumber, red onion, feta cheese, and olives.
  • In a small bowl, whisk together olive oil, red wine vinegar, and minced garlic.
  • Pour the dressing over the salad and toss to combine.
  • Top the salad with the grilled chicken slices and serve immediately.

Notes

To add more flavor, marinate the chicken in olive oil, lemon juice, and herbs for at least 30 minutes before grilling.
