  • 0.5 tsp black pepper freshly ground
  • 1 cup milk for dipping
  • 2 cups vegetable oil for frying

  • Heat the vegetable oil in a large skillet over medium-high heat.
  • Combine cornmeal, salt, and pepper in a shallow dish.
  • Dip each catfish fillet in milk, then dredge in the cornmeal mixture.
  • Carefully place the fillets in the hot oil and fry until golden brown, about 3-4 minutes per side.
  • Remove fillets and drain on paper towels. Serve hot.

Notes

For extra flavor, add a pinch of cayenne pepper to the cornmeal mixture.
