  • 2 tbsp unsalted butter divided
  • 2 tbsp olive oil
  • 4 large yellow onions thinly sliced
  • 1 tsp sugar to help caramelize
  • 1 tsp salt or to taste
  • 1 tsp black pepper freshly ground
  • 3 cups beef broth low sodium
  • 1 cup white wine or extra beef broth
  • 1 tsp fresh thyme leaves or 1/2 tsp dried thyme
  • 1 tsp Worcestershire sauce
  • 4 slices French bread toasted
  • 1 cup Gruyere cheese shredded

Instructions

Preparation Steps

  • Melt 1 tbsp butter and the olive oil in a large pot over medium heat.
  • Add the sliced onions and cook until they begin to soften, about 15 minutes.
  • Stir in the sugar, and continue cooking until onions are caramelized, about 30 more minutes.
  • Add the salt, pepper, thyme, Worcestershire sauce, beef broth, and white wine to the pot.
  • Bring to a boil, then reduce heat and simmer for 20 minutes.
  • Preheat the broiler. Ladle soup into bowls, top with a slice of toasted bread, and sprinkle with Gruyere cheese.
  • Place bowls under the broiler until the cheese is bubbly and golden brown.

Notes

For a vegetarian version, substitute beef broth with vegetable broth.
