Instructions
Preparation Steps
Melt 1 tbsp butter and the olive oil in a large pot over medium heat.
Add the sliced onions and cook until they begin to soften, about 15 minutes.
Stir in the sugar, and continue cooking until onions are caramelized, about 30 more minutes.
Add the salt, pepper, thyme, Worcestershire sauce, beef broth, and white wine to the pot.
Bring to a boil, then reduce heat and simmer for 20 minutes.
Preheat the broiler. Ladle soup into bowls, top with a slice of toasted bread, and sprinkle with Gruyere cheese.
Place bowls under the broiler until the cheese is bubbly and golden brown.
Notes
For a vegetarian version, substitute beef broth with vegetable broth.
