1.5lbsboneless, skinless chicken breastscut into bite-sized pieces
2cupslong-grain white rice
2.5cupschicken brothlow sodium
1packetFrench onion soup mix
1cupFrench fried onions
1cupshredded mozzarella cheese
1tablespoonolive oil
1teaspoondried thyme
0.5teaspoonsaltor to taste
0.5teaspoonblack pepperfreshly ground

Preparation Steps
Preheat the oven to 375°F (190°C).
Heat olive oil in a large skillet over medium heat. Add chicken pieces and cook until browned, about 5-7 minutes.
In a mixing bowl, combine chicken broth and French onion soup mix.
In a 9x13 inch baking dish, spread the rice evenly. Layer cooked chicken on top and pour the broth mixture over the chicken and rice.
Sprinkle dried thyme, salt, and pepper over the top. Cover with foil and bake in the preheated oven for 50 minutes.
Remove the foil and sprinkle mozzarella cheese and French fried onions over the casserole. Return to the oven and bake for an additional 10 minutes, or until the cheese is melted and bubbly.
