  • 2 lbs chicken breasts boneless and skinless
  • 1 packet taco seasoning
  • 1 cup sour cream
  • 1.5 cups shredded cheddar cheese divided
  • 1 can black beans drained and rinsed
  • 1 can diced tomatoes and green chilies drained
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 cup crushed tortilla chips
  • 0.25 cup chopped fresh cilantro for garnish

Instructions

Preparation Steps

  • Preheat oven to 375°F (190°C).
  • In a large pot, boil chicken breasts until cooked through, then shred.
  • In a large bowl, mix shredded chicken with taco seasoning, sour cream, 1 cup shredded cheese, black beans, diced tomatoes and chilies, cumin, and garlic powder.
  • Transfer mixture to a 9x13 inch baking dish and spread evenly.
  • Sprinkle the crushed tortilla chips over the top, followed by the remaining cheese.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  • Garnish with chopped fresh cilantro before serving.

Notes

This casserole can be prepared ahead of time and baked just before serving. It's also a great dish for meal prep. Adjust the spices according to your preference for more or less heat.
