Instructions
Preparation Steps
In a large pot of salted boiling water, cook the macaroni until al dente, about 8 minutes. Drain and transfer to a large bowl.
In a separate bowl, combine mayonnaise, dill pickle relish, mustard, paprika, salt, and black pepper. Stir until well mixed.
Add chopped eggs to the macaroni, and gently fold in the mayonnaise mixture until everything is evenly coated.
Cover the salad and refrigerate for at least 30 minutes to allow flavors to meld.
Before serving, sprinkle with chopped chives and additional paprika if desired.
Notes
This salad is best served chilled and can be made a day in advance to save time. Adjust seasoning to taste as desired.
