Instructions
Preparation Steps
In a large saucepan, melt the butter over medium heat. Add the chopped onion and garlic, sauté until softened, about 3 minutes.
Add the cumin, chili powder, paprika, salt, and pepper. Stir to combine and cook for 1 minute.
Stir in the diced tomatoes with green chilies and cook for another 2 minutes.
Reduce heat to low, then gradually add the velveeta and cheddar cheeses. Stir continuously until melted and smooth.
Serve warm with tortilla chips or your choice of dippers.
Notes
This queso dip can be kept warm in a slow cooker for extended enjoyment.
