  • 1 lb velveeta cheese cubed
  • 1 cup shredded cheddar cheese
  • 1 can diced tomatoes with green chilies 10 oz, drained
  • 1 tbsp unsalted butter
  • 1 small onion finely chopped
  • 2 cloves garlic minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 0.5 tsp paprika
  • 1 pinch salt
  • 1 pinch black pepper

Instructions

Preparation Steps

  • In a large saucepan, melt the butter over medium heat. Add the chopped onion and garlic, sauté until softened, about 3 minutes.
  • Add the cumin, chili powder, paprika, salt, and pepper. Stir to combine and cook for 1 minute.
  • Stir in the diced tomatoes with green chilies and cook for another 2 minutes.
  • Reduce heat to low, then gradually add the velveeta and cheddar cheeses. Stir continuously until melted and smooth.
  • Serve warm with tortilla chips or your choice of dippers.

Notes

This queso dip can be kept warm in a slow cooker for extended enjoyment.
