  • 1.5 lb ground beef Lean or regular
  • 15 oz canned pinto beans Drained and rinsed
  • 15 oz canned diced tomatoes Undrained
  • 8 oz canned sweet corn Drained
  • 1 cup beef broth Low sodium
  • 1 medium onion Chopped
  • 1 tbsp chili powder
  • 1 tsp salt Or to taste
  • 0.5 tsp black pepper
  • 2 cloves garlic Minced
  • 1 tbsp Worcestershire sauce
  • 2 tbsp olive oil

Instructions

Preparation Steps

  • Heat olive oil in a skillet over medium heat.
  • Add ground beef and cook until browned. Drain excess fat.
  • Transfer the browned beef to the slow cooker.
  • Add pinto beans, diced tomatoes, sweet corn, onion, beef broth, chili powder, salt, pepper, garlic, and Worcestershire sauce to the slow cooker.
  • Stir to combine all ingredients.
  • Cover and cook on high for 4 hours or low for 8 hours.
  • Serve hot, garnished with chopped parsley if desired.

Notes

You can add diced potatoes or carrots for extra heartiness.
