Instructions
Preparation Steps
Heat olive oil in a large pan over medium-high heat. Add chuck roast cubes and sear until browned on all sides.
Transfer the beef to a crockpot. Add beef broth and tomato paste, stirring to combine.
Add potatoes, carrots, celery, onion, minced garlic, thyme, rosemary, salt, and black pepper to the crockpot.
Cover and cook on low for 8 hours or until the beef is tender and the vegetables are cooked through.
If adding peas, stir them in during the last 30 minutes of cooking.
Taste and adjust seasoning as needed before serving.
Notes
This stew is perfect for making ahead of time. It tastes even better the next day after the flavors have melded together.
