  • 2 lbs chicken breasts boneless, skinless
  • 1 can diced tomatoes 14 oz, undrained
  • 1 can corn 15 oz, drained
  • 1 can black beans 15 oz, drained and rinsed
  • 1 packet ranch seasoning mix 1 oz
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 package cream cheese 8 oz, cubed

Instructions

Preparation Steps

  • Place the chicken breasts at the bottom of the slow cooker.
  • Top with diced tomatoes, corn, and black beans.
  • Sprinkle ranch seasoning mix, chili powder, cumin, onion powder, and garlic powder over the top.
  • Place the cream cheese cubes on top of the ingredients.
  • Cover and cook on low for 8 hours or high for 4 hours.
  • Before serving, shred the chicken and stir everything together until well combined and the cream cheese is fully melted.

Notes

Serve with rice or tortilla chips for a more filling meal. Garnish with chopped cilantro or sliced jalapeños if desired.
