Instructions
Preparation Steps
Preheat your oven to 425°F (220°C).
Boil the baby potatoes in salted water until tender, about 15-20 minutes. Drain and let them cool slightly.
Place the potatoes on a baking sheet and gently smash each potato with a fork or potato masher.
Drizzle the olive oil over the smashed potatoes. Sprinkle with minced garlic, sea salt, pepper, thyme, and rosemary.
Roast in the preheated oven for 25-30 minutes or until the potatoes are golden brown and crispy.
Garnish with chopped fresh parsley before serving.
Notes
For a spicy kick, add a pinch of red pepper flakes before roasting.
