  • 1.5 pounds baby potatoes Yukon gold or red
  • 3 tablespoons olive oil
  • 4 cloves garlic minced
  • 1 teaspoon sea salt or to taste
  • 1 teaspoon black pepper freshly ground
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 tablespoons fresh parsley chopped, for garnish

Instructions

Preparation Steps

  • Preheat your oven to 425°F (220°C).
  • Boil the baby potatoes in salted water until tender, about 15-20 minutes. Drain and let them cool slightly.
  • Place the potatoes on a baking sheet and gently smash each potato with a fork or potato masher.
  • Drizzle the olive oil over the smashed potatoes. Sprinkle with minced garlic, sea salt, pepper, thyme, and rosemary.
  • Roast in the preheated oven for 25-30 minutes or until the potatoes are golden brown and crispy.
  • Garnish with chopped fresh parsley before serving.

Notes

For a spicy kick, add a pinch of red pepper flakes before roasting.
