  • 2 tablespoons olive oil extra virgin
  • 3 cloves garlic minced
  • 1 can diced tomatoes 14.5 oz can
  • 1 cup heavy cream
  • 2 cups baby spinach fresh
  • 1 teaspoon dried basil
  • 1 teaspoon salt to taste
  • 0.5 teaspoon black pepper freshly ground
  • 0.5 cup parmesan cheese grated

Preparation Steps

  • Cook the cheese tortellini according to the package instructions. Drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  • Add the diced tomatoes and heavy cream to the skillet, and stir to combine. Let it simmer for about 5 minutes.
  • Stir in the fresh spinach and cook until wilted, about 2 minutes.
  • Add the cooked tortellini to the skillet along with the dried basil, salt, and black pepper. Stir well to combine.
  • Sprinkle the grated Parmesan cheese over the top and mix until the cheese is melted and the sauce is creamy.
