Instructions
Preparation Steps
Cook the cheese tortellini according to the package instructions. Drain and set aside.
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
Add the diced tomatoes and heavy cream to the skillet, and stir to combine. Let it simmer for about 5 minutes.
Stir in the fresh spinach and cook until wilted, about 2 minutes.
Add the cooked tortellini to the skillet along with the dried basil, salt, and black pepper. Stir well to combine.
Sprinkle the grated Parmesan cheese over the top and mix until the cheese is melted and the sauce is creamy.
