  • 2 cloves garlic Minced
  • 1 pound chicken breast Cut into bite-sized pieces
  • 4 cups chicken broth Low sodium
  • 2 cups frozen corn Thawed
  • 1 cup heavy cream
  • 2 medium potatoes Peeled and diced
  • 1 teaspoon salt Or to taste
  • 0.5 teaspoon black pepper Freshly ground
  • 0.5 teaspoon paprika
  • 2 tablespoons parsley Chopped, for garnish

Instructions

Preparation Steps

  • Heat olive oil in a large pot over medium heat. Add the onion and garlic, and sauté until tender, about 5 minutes.
  • Add the chicken pieces to the pot and cook until lightly browned.
  • Pour in the chicken broth and bring to a simmer. Add the corn, heavy cream, potatoes, salt, and pepper.
  • Simmer for 20 minutes or until the potatoes are tender and the chowder has thickened.
  • Stir in the paprika and adjust seasoning if necessary.
  • Serve hot, garnished with chopped parsley.

Notes
