Instructions
Preparation Steps
Heat olive oil in a large pot over medium heat. Add the onion and garlic, and sauté until tender, about 5 minutes.
Add the chicken pieces to the pot and cook until lightly browned.
Pour in the chicken broth and bring to a simmer. Add the corn, heavy cream, potatoes, salt, and pepper.
Simmer for 20 minutes or until the potatoes are tender and the chowder has thickened.
Stir in the paprika and adjust seasoning if necessary.
Serve hot, garnished with chopped parsley.
