Instructions
Preparation Steps
Preheat your oven to 375°F (190°C).
In a large skillet, heat olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion is translucent, about 3 minutes.
Add the ground beef to the skillet. Cook until browned, breaking it apart with a spoon as it cooks.
Stir in the diced tomatoes, corn, salt, and pepper. Cook for another 2 minutes, then remove from heat.
Transfer the beef mixture to a 9x13 inch baking dish. Sprinkle shredded cheddar cheese over the mixture.
Top with tater tots, arranged in a single layer over the cheese.
Bake in preheated oven for 30-35 minutes, or until the tater tots are golden brown and crispy. Allow to cool slightly before serving.
Notes
This dish is best served warm and can be paired with a simple green salad for a complete meal.
