  • 1.5 pounds ground beef lean
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 1 can diced tomatoes 14.5 oz
  • 0.5 cup corn kernels frozen or canned
  • 1 cup shredded cheddar cheese
  • 1 package tater tots 32 oz
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper freshly ground

Instructions

Preparation Steps

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat olive oil over medium heat. Add the diced onion and minced garlic, and sauté until the onion is translucent, about 3 minutes.
  • Add the ground beef to the skillet. Cook until browned, breaking it apart with a spoon as it cooks.
  • Stir in the diced tomatoes, corn, salt, and pepper. Cook for another 2 minutes, then remove from heat.
  • Transfer the beef mixture to a 9x13 inch baking dish. Sprinkle shredded cheddar cheese over the mixture.
  • Top with tater tots, arranged in a single layer over the cheese.
  • Bake in preheated oven for 30-35 minutes, or until the tater tots are golden brown and crispy. Allow to cool slightly before serving.

Notes

This dish is best served warm and can be paired with a simple green salad for a complete meal.
