  • 0.25 tsp salt
  • 0.5 cup unsalted butter softened
  • 0.75 cup sugar
  • 1 tsp vanilla extract
  • 2 large eggs room temperature
  • 2 ripe bananas mashed
  • 0.5 cup cottage cheese full-fat, smooth
  • 0.5 cup chopped walnuts optional

Preparation Steps

  • Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  • In a bowl, whisk together the flour, baking soda, and salt. Set aside.
  • In a large bowl, cream the softened butter and sugar until light and fluffy. Mix in vanilla extract.
  • Add the eggs one at a time, beating well with each addition.
  • Mix in the mashed bananas and cottage cheese until combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  • Fold in the chopped walnuts if using.
  • Pour the batter into the prepared loaf pan and smooth the top.
  • Bake in the preheated oven for 60 minutes, or until a toothpick inserted into the center comes out clean.
  • Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

For an extra twist, try adding a teaspoon of cinnamon or a handful of chocolate chips!
