Preparation Steps
Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
In a bowl, whisk together the flour, baking soda, and salt. Set aside.
In a large bowl, cream the softened butter and sugar until light and fluffy. Mix in vanilla extract.
Add the eggs one at a time, beating well with each addition.
Mix in the mashed bananas and cottage cheese until combined.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Fold in the chopped walnuts if using.
Pour the batter into the prepared loaf pan and smooth the top.
Bake in the preheated oven for 60 minutes, or until a toothpick inserted into the center comes out clean.
Let cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
