  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 0.75 cup granulated sugar
  • 0.5 cup unsalted butter softened
  • 2 large eggs room temperature
  • 3 medium bananas ripe, mashed
  • 1 teaspoon vanilla extract
  • 0.5 cup chopped walnuts optional

Instructions

Preparation Steps

  • Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  • In a bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
  • In a separate large bowl, cream together the butter and sugar until light and fluffy.
  • Beat in the eggs one at a time, mixing well after each addition.
  • Stir in the mashed bananas and vanilla extract.
  • Gradually add the dry ingredients to the banana mixture, mixing until just combined. Fold in the walnuts if using.
  • Divide the batter evenly among the muffin cups, filling each about three-quarters full.
  • Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  • Allow muffins to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

These banana bread muffins can be stored in an airtight container at room temperature for up to 3 days.
