Ingredients
 

  • 4 large apples like Honeycrisp, Fuji, or Granny Smith
  • 1/4 lb 1/2 stick unsalted butter, melted
  • 1/3 cup light brown sugar
  • 1/2 cup old-fashioned oats
  • 1/4 cup chopped pecans or walnuts optional
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 1/2 cup water or apple cider for the baking dish

Instructions

  • Prep the Apples:
  • Preheat your oven to 375°F (190°C). Wash and core the apples, making a well in the center but not cutting all the way through. Use a spoon or melon baller to scoop out the seeds.
  • Make the Filling:
  • In a bowl, combine melted butter, brown sugar, oats, cinnamon, nutmeg, vanilla, salt, and nuts (if using). Mix until crumbly and moist.
  • Stuff the Apples:
  • Spoon the filling into the center of each apple, pressing it in and mounding a little extra on top.
  • Bake:
  • Place apples upright in a baking dish. Pour water or cider into the bottom of the dish. Cover with foil and bake for 25 minutes. Remove foil and continue baking uncovered for another 15–20 minutes, or until the apples are tender and the tops are golden.
  • Serve Warm:
  • Serve as-is or top with ice cream, whipped cream, or Greek yogurt.

Notes

Serve these baked apples warm with a scoop of vanilla ice cream for an extra special treat.
