Instructions
Preparation Steps
Rinse the rice under cold water until the water runs clear.
In a medium-sized saucepan, add the rice, water, salt, and olive oil. Bring to a boil over medium-high heat.
Once boiling, reduce the heat to low, cover, and let simmer for 15-20 minutes or until the water is absorbed and the rice is tender.
Remove from heat and let the rice sit, covered, for 5 minutes. Fluff with a fork.
Add lime juice and cilantro to the rice. Stir until well combined.
