  • 1 cup long-grain white rice uncooked
  • 2 cups water
  • 0.5 teaspoon salt
  • 1 tablespoon olive oil
  • 2 tablespoons lime juice freshly squeezed
  • 0.25 cup cilantro chopped

Preparation Steps

  • Rinse the rice under cold water until the water runs clear.
  • In a medium-sized saucepan, add the rice, water, salt, and olive oil. Bring to a boil over medium-high heat.
  • Once boiling, reduce the heat to low, cover, and let simmer for 15-20 minutes or until the water is absorbed and the rice is tender.
  • Remove from heat and let the rice sit, covered, for 5 minutes. Fluff with a fork.
  • Add lime juice and cilantro to the rice. Stir until well combined.
