Preparation Steps
In a mixing bowl, combine the peanut butter, unsalted butter, vanilla extract, and salt. Mix until smooth.
Gradually add the powdered sugar to the peanut butter mixture, stirring until fully incorporated.
Shape the mixture into egg shapes and place them on a baking sheet lined with parchment paper. Refrigerate for 30 minutes.
In a microwave-safe bowl, melt the chocolate chips and coconut oil together, stirring every 30 seconds until smooth.
Dip each peanut butter egg into the melted chocolate, ensuring they are completely coated. Allow excess chocolate to drip off.
Place the coated eggs back on the parchment paper and refrigerate until the chocolate is set.
