  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 0.33 cup unsweetened cocoa powder preferably Dutch-processed
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.5 cup buttermilk at room temperature
  • 0.25 cup vegetable oil
  • 1 large egg at room temperature
  • 1 teaspoon vanilla extract
  • 0.5 cup boiling water needed at the end

Instructions

Preparation Steps

  • Preheat the oven to 350°F (175°C) and line a 12-cup muffin tin with cupcake liners.
  • In a large bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  • Add the buttermilk, vegetable oil, egg, and vanilla extract to the dry ingredients and mix until well combined.
  • Gradually stir in the boiling water and mix until the batter is smooth.
  • Divide the batter evenly among the prepared muffin cups, filling each about two-thirds full.
  • Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  • Remove from the oven and allow to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

These cupcakes can be stored in an airtight container at room temperature for up to three days.
