Strawberries & Coating

  • 1 pound fresh strawberries, stems on (about 18–22 medium)
  • 12 ounces good-quality semisweet chocolate melting wafers or chopped bars
  • 1 teaspoon refined coconut oil
  • 1 pinch fine sea salt
  • 1/3 cup finely chopped toasted nuts or unsweetened shredded coconut (optional)

Preparation Steps

  • Dry the strawberries thoroughly with paper towels—any moisture will keep the chocolate from sticking. Line a sheet pan with parchment, then place the pan in the fridge for 5 minutes to chill.
  • Bring 1 inch of water to a gentle simmer in a small saucepan. Set a heatproof bowl on top (the bowl should not touch the water). Add the chocolate and coconut oil to the bowl.
  • Stir until about 80% melted, 3–5 minutes. Remove the bowl from the heat and keep stirring until completely smooth. Add a pinch of fine sea salt to brighten the chocolate.
  • Do a quick test dip with one strawberry to check the flow. If the chocolate feels too thick, warm the bowl back over the steam for 10–15 seconds and stir again.
  • Hold each berry by the stem or skewer it near the hull. Dip and rotate to coat, let excess drip back into the bowl, then lightly swipe the bottom edge on the rim so it doesn’t puddle. Set on the chilled parchment and sprinkle with nuts or coconut while still tacky, if using.
  • Slide the tray into the fridge for 8–10 minutes to set. For a quick drizzle, flick any remaining melted chocolate over the set berries with a fork. Chill 2–3 minutes more and serve the same day.

Notes

Best enjoyed the day they’re made. For short-term storage, keep berries in a single layer on parchment in the fridge, loosely tented, up to 24 hours. Let stand 10 minutes at cool room temperature before serving for the gloss to return.
Tip: If any condensation appears after chilling, gently dab the surface with a paper towel—don’t wipe—to keep the coating intact.
