Instructions
Preparation Steps
In a large bowl, beat the cream cheese until smooth.
Mix in powdered sugar, cocoa powder, and vanilla extract. Blend until well combined.
Scoop tablespoon-sized balls of the mixture onto a lined baking sheet and freeze for 1 hour.
Melt the chocolate chips and coconut oil together until smooth.
Dip each frozen cheesecake ball into the melted chocolate and place back on the baking sheet. Sprinkle with crushed graham crackers if desired.
Refrigerate the cheesecake bites until the chocolate is set.
