  • 8 oz cream cheese softened
  • 0.75 cup powdered sugar
  • 0.5 cup cocoa powder unsweetened
  • 1 tsp vanilla extract
  • 12 oz semi-sweet chocolate chips melted
  • 1 tbsp coconut oil or butter
  • 0.25 cup crushed graham crackers for topping, optional

Instructions

Preparation Steps

  • In a large bowl, beat the cream cheese until smooth.
  • Mix in powdered sugar, cocoa powder, and vanilla extract. Blend until well combined.
  • Scoop tablespoon-sized balls of the mixture onto a lined baking sheet and freeze for 1 hour.
  • Melt the chocolate chips and coconut oil together until smooth.
  • Dip each frozen cheesecake ball into the melted chocolate and place back on the baking sheet. Sprinkle with crushed graham crackers if desired.
  • Refrigerate the cheesecake bites until the chocolate is set.
