Preparation Steps
In a large skillet, heat the vegetable oil over medium heat. Add the chopped onion and garlic and sauté until translucent.
Add the ground beef to the skillet and cook until browned, breaking it apart with a spoon as it cooks.
Stir in the chili powder, cumin, salt, and black pepper, and cook for 1 minute.
Add the diced tomatoes, kidney beans, macaroni pasta, and beef broth. Stir well to combine.
Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for about 15 minutes, or until the macaroni is tender.
Remove the skillet from the heat and sprinkle the shredded cheddar cheese over the top. Cover and let it sit until the cheese has melted.
