  • 6 oz green chiles roasted and peeled
  • 2 cups cheddar cheese shredded
  • 2 cups Monterey Jack cheese shredded
  • 4 eggs beaten
  • 1 cup milk whole milk
  • 1 tbsp flour
  • 1 tsp salt

Instructions

Preparation Steps

  • Preheat oven to 350°F (175°C).
  • Layer half of the green chiles in a baking dish. Top with half of the cheddar and Monterey Jack cheeses.
  • Repeat the layers with the remaining chiles and cheeses.
  • In a bowl, whisk together eggs, milk, flour, and salt. Pour over the layered chiles and cheese.
  • Bake for 45 minutes or until the casserole is golden brown and firm.

Notes

For an extra kick, add a pinch of cayenne pepper to the egg mixture.
