  • 1 lb chicken breast boneless, skinless
  • 1 tbsp olive oil
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2 cups chicken broth
  • 1 can diced tomatoes 15 oz can
  • 1 can black beans drained and rinsed
  • 1 can corn drained
  • 1 packet taco seasoning or homemade
  • 0.5 cup shredded cheddar cheese for garnish
  • 1 lime cut into wedges, for serving
  • 1 cilantro chopped, for garnish

Instructions

Preparation Steps

  • Heat olive oil in a large pot over medium heat. Add chopped onion and garlic, sauté until translucent.
  • Add the chicken breast and cook until lightly browned on all sides.
  • Pour in the chicken broth, diced tomatoes, black beans, corn, and taco seasoning. Stir well.
  • Bring to a simmer and let cook on low heat for about 30 minutes, or until the chicken is cooked through.
  • Remove the chicken, shred it, and return to the pot. Stir well to combine.
  • Serve hot with a garnish of shredded cheddar cheese, cilantro, and a wedge of lime.

Notes

For a spicier version, consider adding chopped jalapeños or extra taco seasoning.
