Instructions
Preparation Steps
Heat olive oil in a large pot over medium heat. Add chopped onion and garlic, sauté until translucent.
Add the chicken breast and cook until lightly browned on all sides.
Pour in the chicken broth, diced tomatoes, black beans, corn, and taco seasoning. Stir well.
Bring to a simmer and let cook on low heat for about 30 minutes, or until the chicken is cooked through.
Remove the chicken, shred it, and return to the pot. Stir well to combine.
Serve hot with a garnish of shredded cheddar cheese, cilantro, and a wedge of lime.
Notes
For a spicier version, consider adding chopped jalapeños or extra taco seasoning.
