  • 1.5 lb boneless, skinless chicken breasts cubed
  • 2 cup salsa mild or medium, as preferred
  • 1 package taco seasoning mix about 1 oz package
  • 1 cup shredded cheddar cheese divided
  • 1 cup sour cream
  • 2 cup tortilla chips crushed

Instructions

Preparation Steps

  • Preheat your oven to 350°F (175°C).
  • In a large skillet, cook the cubed chicken over medium heat until no longer pink, about 6-8 minutes.
  • Stir in the salsa and taco seasoning mix. Cook for another 2 minutes.
  • In a 9x13 inch baking dish, layer the salsa chicken mixture, sprinkle with 1/2 cup of cheese.
  • Spread the sour cream over the chicken mixture, sprinkle with the remaining cheese and crushed tortilla chips.
  • Bake in the preheated oven for 20-25 minutes until the cheese is bubbly and golden.

Notes

For an extra kick, consider adding sliced jalapeños to the top before baking.
