  • 1.5 lbs chicken breast boneless, skinless
  • 12 oz spaghetti
  • 1 can cream of mushroom soup 10.5 oz can
  • 1 can diced tomatoes with green chilies 10 oz can, drained
  • 1 cup chicken broth
  • 2 cups shredded cheddar cheese divided
  • 1 tbsp olive oil
  • 1 medium onion chopped
  • 1 tsp garlic powder
  • 0.5 tsp salt to taste
  • 0.5 tsp black pepper to taste
  • 1 tbsp fresh parsley chopped, for garnish

Instructions

Preparation Steps

  • Cook the spaghetti according to the package instructions. Drain and set aside.
  • In a large pot, heat olive oil over medium heat. Add chopped onion and cook until softened.
  • Add the chicken breast to the pot and cook until browned on all sides and fully cooked.
  • Stir in the cream of mushroom soup, diced tomatoes with green chilies, chicken broth, garlic powder, salt, and black pepper. Mix until well combined.
  • Add the cooked spaghetti and 1 1/2 cups of cheddar cheese to the pot. Stir until the cheese is melted and everything is heated through.
  • Sprinkle the remaining 1/2 cup of cheddar cheese on top. Cover and let it sit for a few minutes to melt the cheese.
  • Garnish with chopped parsley and serve warm.

Notes

Feel free to adjust the spices to your liking, or add some red pepper flakes for extra heat.
