Instructions
Preparation Steps
Cook the spaghetti according to the package instructions. Drain and set aside.
In a large pot, heat olive oil over medium heat. Add chopped onion and cook until softened.
Add the chicken breast to the pot and cook until browned on all sides and fully cooked.
Stir in the cream of mushroom soup, diced tomatoes with green chilies, chicken broth, garlic powder, salt, and black pepper. Mix until well combined.
Add the cooked spaghetti and 1 1/2 cups of cheddar cheese to the pot. Stir until the cheese is melted and everything is heated through.
Sprinkle the remaining 1/2 cup of cheddar cheese on top. Cover and let it sit for a few minutes to melt the cheese.
Garnish with chopped parsley and serve warm.

Feel free to adjust the spices to your liking, or add some red pepper flakes for extra heat.
