  • 1 tablespoon lemon juice
  • 0.5 cup celery diced
  • 0.25 cup red onion finely chopped

  • 0.5 teaspoon black pepper freshly ground
  • 4 slices bread whole grain or your choice
  • 1 cup lettuce shredded
  • 1 medium tomato sliced

  • Top the chicken salad with shredded lettuce and sliced tomato.
  • Cover with the remaining bread slices to form sandwiches. Serve immediately.
