  • 1.5 lb chicken breast cut into cubes
  • 1 box Rice-A-Roni chicken flavor
  • 2 cups chicken broth
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 0.5 cup milk
  • 1 tbsp olive oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper freshly ground
  • 1 tsp garlic powder
  • 2 tbsp chopped parsley for garnish

Instructions

Preparation Steps

  • Preheat oven to 350°F (175°C).
  • In a large skillet, heat olive oil over medium heat. Add chicken cubes and cook until browned on all sides.
  • In a large bowl, combine cooked chicken, Rice-A-Roni, chicken broth, sour cream, milk, salt, pepper, and garlic powder. Mix well.
  • Transfer mixture to a greased casserole dish. Sprinkle shredded cheddar cheese on top.
  • Bake in the preheated oven for 45 minutes, or until the casserole is bubbly and golden on top.
  • Remove from oven and let cool slightly before serving. Garnish with chopped parsley.

Notes

For a spicier version, add a pinch of cayenne pepper to the mixture before baking.
