  • 1.5 pounds chicken breasts boneless, skinless
  • 3 cups chicken broth
  • 2 cups potatoes peeled and diced
  • 1 cup carrot diced
  • 1 cup celery diced
  • 1 cup onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon salt or to taste
  • 0.5 teaspoon black pepper freshly ground
  • 0.5 teaspoon thyme dried
  • 0.5 teaspoon oregano dried
  • 2 tablespoons olive oil
  • 2 tablespoons parsley fresh, chopped

Instructions

Preparation Steps

  • In a large pot, heat olive oil over medium heat. Add onions, garlic, carrots, and celery. Sauté until vegetables are tender, about 5 minutes.
  • Add chicken breasts to the pot along with chicken broth, potatoes, salt, pepper, thyme, and oregano.
  • Bring to a boil, then reduce heat and simmer for 30 minutes until chicken is cooked through and potatoes are tender.
  • Remove chicken from the pot, shred it using two forks, then return it to the pot. Stir in fresh parsley before serving.

Notes

For added flavor, consider adding a dash of lemon juice before serving. Adjust seasoning to taste if needed.
