Instructions
Preparation Steps
In a large pot, heat olive oil over medium heat. Add onions, garlic, carrots, and celery. Sauté until vegetables are tender, about 5 minutes.
Add chicken breasts to the pot along with chicken broth, potatoes, salt, pepper, thyme, and oregano.
Bring to a boil, then reduce heat and simmer for 30 minutes until chicken is cooked through and potatoes are tender.
Remove chicken from the pot, shred it using two forks, then return it to the pot. Stir in fresh parsley before serving.
Notes
For added flavor, consider adding a dash of lemon juice before serving. Adjust seasoning to taste if needed.
