Instructions
Preparation Steps
In a large bowl, mix ground chicken, breadcrumbs, eggs, and parmesan cheese until well combined. Form into small meatballs.
In a large skillet, heat olive oil over medium heat. Add meatballs and cook until golden on all sides.
Remove the meatballs from the skillet and set aside. In the same skillet, add lemon juice, chicken broth, butter, and capers. Bring to a simmer.
Return the meatballs to the skillet and simmer in the sauce for 5-10 minutes. Garnish with parsley before serving.
Notes
For extra flavor, serve over pasta or rice. Adjust seasoning as needed to taste.
