  • 1.5 pounds ground chicken
  • 1 cup breadcrumbs preferably panko
  • 2 eggs
  • 0.25 cup parmesan cheese grated
  • 2 tablespoons olive oil
  • 0.5 cup lemon juice freshly squeezed
  • 0.5 cup chicken broth
  • 2 tablespoons butter unsalted
  • 0.25 cup capers drained
  • 0.25 cup parsley chopped

Preparation Steps

  • In a large bowl, mix ground chicken, breadcrumbs, eggs, and parmesan cheese until well combined. Form into small meatballs.
  • In a large skillet, heat olive oil over medium heat. Add meatballs and cook until golden on all sides.
  • Remove the meatballs from the skillet and set aside. In the same skillet, add lemon juice, chicken broth, butter, and capers. Bring to a simmer.
  • Return the meatballs to the skillet and simmer in the sauce for 5-10 minutes. Garnish with parsley before serving.

Notes

For extra flavor, serve over pasta or rice. Adjust seasoning as needed to taste.
