Whisk the Caesar dressing with lemon juice, pepper, and salt in a large bowl.
Add the chicken and Parmesan. Toss until evenly coated.
Fold in the chopped romaine just until lightly dressed.
Warm a skillet over medium heat. Brush with a little olive oil and heat tortillas 15–20 seconds per side.
Lay out tortillas. Divide the chicken mixture down the center and sprinkle with crushed croutons.
Fold the sides over the filling, then roll tightly into wraps. Slice in half if desired and serve.
