Instructions
Preparation Steps
In a large pot over medium heat, add olive oil and cook the chicken until browned. Remove and set aside.
In the same pot, add sausage and cook until browned. Remove and set aside.
Add onion, bell pepper, and celery to the pot, cooking until softened. Stir in garlic and cook for another minute.
Add rice, tomatoes, chicken broth, thyme, oregano, paprika, and cayenne. Stir in chicken and sausage.
Bring to a boil, then reduce heat to low and simmer, covered, for 20-25 minutes or until rice is cooked.
Fluff with a fork, garnish with parsley and serve hot.
Notes
You can adjust the spice level by adding more or less cayenne pepper.
