  • 1.5 lbs chicken thighs bone-in, skinless, diced
  • 1 lb Andouille sausage sliced
  • 1 cup diced onion
  • 1 cup diced green bell pepper
  • 1 cup diced celery
  • 2 cloves garlic minced
  • 1.5 cups long grain white rice
  • 1 can diced tomatoes 14.5 oz can
  • 3 cups chicken broth low sodium
  • 0.5 tsp dried thyme
  • 0.5 tsp dried oregano
  • 1 tsp paprika
  • 0.5 tsp cayenne pepper or to taste
  • 2 tbsp olive oil
  • 2 tbsp chopped parsley for garnish

Instructions

Preparation Steps

  • In a large pot over medium heat, add olive oil and cook the chicken until browned. Remove and set aside.
  • In the same pot, add sausage and cook until browned. Remove and set aside.
  • Add onion, bell pepper, and celery to the pot, cooking until softened. Stir in garlic and cook for another minute.
  • Add rice, tomatoes, chicken broth, thyme, oregano, paprika, and cayenne. Stir in chicken and sausage.
  • Bring to a boil, then reduce heat to low and simmer, covered, for 20-25 minutes or until rice is cooked.
  • Fluff with a fork, garnish with parsley and serve hot.

Notes

You can adjust the spice level by adding more or less cayenne pepper.
