Instructions
Preparation Steps
Heat olive oil in a large pot over medium heat. Add chopped onion and garlic, sauté until translucent.
Add ground beef to the pot and cook until browned. Drain excess fat.
Stir in taco seasoning, salt, and pepper. Cook for another minute.
Add beef broth, diced tomatoes, black beans, and corn. Bring to a boil.
Reduce heat and let simmer for 15 minutes.
Stir in cheddar cheese until melted. Serve hot.
