  • 1 lb ground beef lean
  • 1 can diced tomatoes 14 oz, with green chilies
  • 1 can black beans 15 oz, drained and rinsed
  • 1 can corn 15 oz, drained
  • 2 cups beef broth
  • 1 packet taco seasoning 1 oz
  • 1 cup cheese shredded cheddar
  • 1 small onion chopped
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 0.5 tsp salt to taste
  • 0.5 tsp pepper to taste

Instructions

Preparation Steps

  • Heat olive oil in a large pot over medium heat. Add chopped onion and garlic, sauté until translucent.
  • Add ground beef to the pot and cook until browned. Drain excess fat.
  • Stir in taco seasoning, salt, and pepper. Cook for another minute.
  • Add beef broth, diced tomatoes, black beans, and corn. Bring to a boil.
  • Reduce heat and let simmer for 15 minutes.
  • Stir in cheddar cheese until melted. Serve hot.

Notes

This soup can be served with tortilla chips or topped with sour cream for extra flavor.
