In a large bowl, mix together the shredded chicken, cheddar cheese, cream cheese, jalapeños, garlic powder, onion powder, cumin, salt, and pepper until well combined.
Place a tortilla on a flat surface and spread a heaping tablespoon of the chicken mixture down the center of the tortilla.
Roll the tortilla tightly around the filling, squeezing to compact filling, and place seam side down on a baking sheet. Repeat with remaining tortillas and filling.
Brush the rolled taquitos lightly with olive oil.
Bake for 15-20 minutes or until the taquitos are golden brown and crispy.
Serve hot with salsa or guacamole.

For an extra crispy texture, you can fry the taquitos instead of baking them.
