Instructions
Preparation Steps
Preheat oven to 375°F (190°C).
Boil cauliflower florets in a large pot of salted water for 5-7 minutes until tender. Drain well and set aside.
In a medium saucepan, melt butter over medium heat. Stir in the flour and cook for 1-2 minutes until the raw taste of the flour is gone.
Gradually whisk in the milk until smooth. Cook while stirring until the sauce thickens.
Add 1 and 1/2 cups of cheddar cheese, garlic powder, onion powder, salt, and pepper to the sauce. Stir until cheese is melted and the sauce is smooth.
Combine cooked cauliflower with prepared cheese sauce in a large bowl. Transfer mixture to a greased 9x13 inch baking dish.
Sprinkle remaining 1/2 cup of cheddar cheese and breadcrumbs over the top of the cauliflower mixture.
Bake in preheated oven for 25-30 minutes, or until the top is golden brown and the cheese is bubbling.
Garnish with chopped parsley before serving.
Notes
This dish makes an excellent side for grilled meats or a standalone vegetarian main course.
