  • 1.5 lbs ground beef lean
  • 2 tbsp olive oil extra virgin
  • 1 lb russet potatoes diced
  • 1 cup cheddar cheese shredded
  • 0.5 cup onion chopped
  • 2 cloves garlic minced
  • 1 tsp salt to taste
  • 0.5 tsp black pepper freshly ground
  • 1 tsp paprika
  • 2 tbsp parsley chopped, for garnish

Instructions

Preparation Steps

  • Heat olive oil in a large skillet over medium-high heat. Add chopped onion and minced garlic, and sauté until the onion is translucent.
  • Add the ground beef to the skillet, breaking it apart with a spoon. Cook until browned and no longer pink.
  • Add diced potatoes to the beef. Season with salt, black pepper, and paprika. Stir well.
  • Cover the skillet and reduce heat to medium. Cook for about 15 minutes or until the potatoes are tender, stirring occasionally.
  • Sprinkle shredded cheddar cheese over the mixture. Cover again and allow the cheese to melt for about 2 minutes.
  • Garnish with chopped parsley before serving.

Notes

Make sure to use a large enough skillet to accommodate all ingredients comfortably.
