  • 0.75 cup unsalted butter melted
  • 1 cup brown sugar packed
  • 0.25 cup granulated sugar
  • 2 large eggs room temperature
  • 2 teaspoons vanilla extract
  • 1 cup grated carrots about 2 medium carrots
  • 0.5 cup chopped walnuts optional

Preparation Steps

  • Preheat the oven to 350°F (175°C). Grease a 9x9 inch baking pan with non-stick spray or line with parchment paper.
  • In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Set aside.
  • In a large bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth. Add the eggs and vanilla extract, mixing until well combined.
  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Fold in the grated carrots and chopped walnuts, if using.
  • Pour the batter into the prepared baking pan, spreading evenly. Bake for 28-32 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the blondies to cool completely in the pan on a wire rack before cutting into squares.

Notes

These blondies are great with a light cream cheese glaze drizzled on top. Store in an airtight container at room temperature for up to 3 days.
