Instructions
Preparation Steps
In a large pot, heat olive oil over medium heat. Add the onions and garlic, and sauté until the onions are translucent.
Add carrots and celery, and continue to cook for 5 minutes, stirring occasionally.
Stir in chopped cabbage and cook until slightly softened.
Pour in the vegetable broth and diced tomatoes. Add thyme, basil, black pepper, and salt.
Bring to a boil, then reduce heat and let simmer for 25 minutes.
Taste and adjust seasoning if needed. Serve hot.
Notes
For extra flavor, you can add a splash of lemon juice before serving or top with fresh herbs like parsley or dill.
