  • 1 head cabbage chopped
  • 1 large onion diced
  • 3 cloves garlic minced
  • 2 cups carrots sliced
  • 2 cups celery sliced
  • 8 cups vegetable broth
  • 1 can diced tomatoes 14.5 oz can
  • 1 tsps dried thyme
  • 1 tsps dried basil
  • 1 tsps black pepper freshly ground
  • 1 tsps salt to taste

Instructions

Preparation Steps

  • In a large pot, heat olive oil over medium heat. Add the onions and garlic, and sauté until the onions are translucent.
  • Add carrots and celery, and continue to cook for 5 minutes, stirring occasionally.
  • Stir in chopped cabbage and cook until slightly softened.
  • Pour in the vegetable broth and diced tomatoes. Add thyme, basil, black pepper, and salt.
  • Bring to a boil, then reduce heat and let simmer for 25 minutes.
  • Taste and adjust seasoning if needed. Serve hot.

Notes

For extra flavor, you can add a splash of lemon juice before serving or top with fresh herbs like parsley or dill.
