  • 4 cups sweet potatoes peeled and cubed
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 2 units large eggs lightly beaten
  • 0.5 cup milk
  • 0.5 cup butter melted
  • 1 cup buttery crackers crushed
  • 0.5 cup brown sugar packed
  • 0.25 cup pecans chopped

Instructions

Preparation Steps

  • Preheat your oven to 350°F (175°C).
  • Boil the sweet potatoes in a large pot until tender, about 15 minutes. Drain and mash.
  • In a bowl, combine mashed sweet potatoes, granulated sugar, eggs, vanilla extract, milk, and melted butter. Mix until smooth.
  • Pour the sweet potato mixture into a greased baking dish.
  • In another bowl, combine crushed buttery crackers, brown sugar, and pecans. Spread evenly over the sweet potato mixture.
  • Bake for 30 minutes or until the top is golden brown and the casserole is heated through.

Notes

For an extra kick, add a pinch of cinnamon or nutmeg to the sweet potato mixture.
