Instructions
Preparation Steps
Preheat your oven to 350°F (175°C).
Boil the sweet potatoes in a large pot until tender, about 15 minutes. Drain and mash.
In a bowl, combine mashed sweet potatoes, granulated sugar, eggs, vanilla extract, milk, and melted butter. Mix until smooth.
Pour the sweet potato mixture into a greased baking dish.
In another bowl, combine crushed buttery crackers, brown sugar, and pecans. Spread evenly over the sweet potato mixture.
Bake for 30 minutes or until the top is golden brown and the casserole is heated through.
Notes
For an extra kick, add a pinch of cinnamon or nutmeg to the sweet potato mixture.
