  • 1.5 cups graham cracker crumbs finely crushed
  • 0.5 cup unsalted butter melted
  • 2 packages butterscotch instant pudding mix 3.4 oz each
  • 3 cups milk cold
  • 8 oz cream cheese softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 16 oz whipped topping thawed
  • 0.5 cup toffee bits optional garnish

Preparation Steps

  • Preheat the oven to 350°F (175°C). Combine the graham cracker crumbs and melted butter in a medium bowl. Press the mixture into the bottom of a 9x13 inch baking dish.
  • Bake the crust for 10 minutes, then let cool completely.
  • In a large bowl, whisk together the butterscotch pudding mix and milk until smooth and thickened. Set aside.
  • In another bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth. Fold in 2 cups of the whipped topping.
  • Spread the cream cheese mixture evenly over the cooled crust.
  • Layer the butterscotch pudding over the cream cheese layer.
  • Spread the remaining whipped topping over the pudding layer. Sprinkle with toffee bits if using.
  • Refrigerate for at least 2 hours or until set before serving.

Notes

For best results, prepare this dessert a day ahead to allow the flavors to meld together. Feel free to add different toppings like chocolate shavings, nuts, or fresh berries.
