Ingredients
 

  • 1/2 lb 2 sticks unsalted butter, melted and cooled slightly
  • 3/4 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups mashed ripe bananas about 3–4 bananas
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon optional
  • 1/2 cup chopped walnuts or pecans optional

Instructions

  • Preheat Oven:
  • Heat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
  • Mix Wet Ingredients:
  • In a large mixing bowl, whisk together the melted butter and brown sugar until smooth. Add the eggs and vanilla, then stir in the mashed bananas.
  • Add Dry Ingredients:
  • Sprinkle flour, baking soda, salt, and cinnamon over the banana mixture. Stir until just combined—don’t overmix. If using, fold in nuts at this point.
  • Bake:
  • Pour the batter into your prepared loaf pan and smooth the top. Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean. If the top browns too quickly, cover loosely with foil for the last 10–15 minutes.
  • Cool & Slice:
  • Let the bread cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely. Slice and enjoy!
