This easy blueberry French toast bake is a delicious breakfast dish that's perfect for a weekend brunch. With a hint of cinnamon and a generous helping of blueberries, this dish will delight the whole family.
Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking dish.
Layer half of the bread cubes in the prepared baking dish. Sprinkle half of the blueberries over the bread. Top with remaining bread cubes and blueberries.
In a large bowl, whisk together the eggs, milk, heavy cream, sugar, vanilla extract, cinnamon, and salt. Pour the egg mixture evenly over the bread and blueberries. Press gently to ensure the bread is soaked.
Cover the dish with aluminum foil and bake in the preheated oven for 30 minutes. Remove the foil and continue baking for another 15 minutes, or until the top is golden brown and the custard is set.
