Ingredients
 

  • For the Crust:
  • 1 1/2 cups crushed golden Oreos or vanilla wafers
  • 1/4 lb 1/2 stick unsalted butter, melted
  • For the Filling:
  • 1 3.4 oz package instant vanilla pudding mix
  • 1 1/2 cups cold milk
  • 1/2 teaspoon almond extract optional, for that birthday cake flavor
  • 1/2 cup rainbow sprinkles divided
  • 1 1/2 cups whipped topping like Cool Whip
  • 1/2 cup crushed cake mix yellow or white (optional but adds that classic “birthday cake” taste)
  • For the Topping:
  • More whipped topping
  • Sprinkles or crushed cookies
  • Birthday candles optional, but fun!

Instructions

  • Make the Crust:
  • Mix cookie crumbs with melted butter until it resembles wet sand. Press firmly into the bottom and sides of a 9-inch pie pan. Chill in the freezer for 15 minutes while you prepare the filling.
  • Prepare the Filling:
  • In a bowl, whisk pudding mix, milk, and almond extract for 2 minutes until thickened. Stir in crushed cake mix (if using) and fold in 1/2 cup sprinkles.
  • Add Whipped Topping:
  • Gently fold in 1 1/2 cups of whipped topping until smooth and creamy.
  • Assemble the Pie:
  • Pour the filling into the chilled crust and smooth the top. Cover and refrigerate for at least 4 hours (or overnight) until set.
  • Decorate:
  • Just before serving, spread extra whipped topping on top. Sprinkle with remaining rainbow sprinkles or crushed cookies. Add candles if it’s a birthday celebration!

Notes

Allow the cake to cool completely before serving or decorating.
