Instructions
Make the Crust:
Mix cookie crumbs with melted butter until it resembles wet sand. Press firmly into the bottom and sides of a 9-inch pie pan. Chill in the freezer for 15 minutes while you prepare the filling.
Prepare the Filling:
In a bowl, whisk pudding mix, milk, and almond extract for 2 minutes until thickened. Stir in crushed cake mix (if using) and fold in 1/2 cup sprinkles.
Add Whipped Topping:
Gently fold in 1 1/2 cups of whipped topping until smooth and creamy.
Assemble the Pie:
Pour the filling into the chilled crust and smooth the top. Cover and refrigerate for at least 4 hours (or overnight) until set.
Decorate:
Just before serving, spread extra whipped topping on top. Sprinkle with remaining rainbow sprinkles or crushed cookies. Add candles if it’s a birthday celebration!
Notes
Allow the cake to cool completely before serving or decorating.
