  • 0.5 teaspoon salt
  • 0.75 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 large eggs room temperature
  • 1.5 cups mashed bananas about 4 ripe bananas
  • 0.5 cup sour cream
  • 1 teaspoon vanilla extract

Preparation Steps

  • Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.
  • In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  • In a large bowl, cream the butter and sugar together until light and fluffy. Add the eggs, one at a time, beating well after each addition.
  • Mix in the mashed bananas, sour cream, and vanilla extract until well combined.
  • Gradually add the dry ingredients to the banana mixture, stirring until just combined.
  • Pour the batter into the prepared baking pan and spread it evenly using a spatula.
  • Bake for 45 minutes or until a toothpick inserted in the center comes out clean.
  • Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

This cake is delicious on its own, but you can also top it with cream cheese frosting or a dusting of powdered sugar for an extra treat.
